1In a small bowl, combine smoked paprika , cumin , thyme , oregano , cayenne pepper , garlic powder , salt , and freshly cracked pepper .smoked paprika: 1 Tbsp, cumin: 1 tsp, thyme: 1 tsp, oregano: 1 tsp, cayenne pepper: 1/4 tsp, garlic powder: 1/4 tsp, salt: 1/4 tsp, freshly cracked pepper: 20 cranks

2Liberally coat both sides of each tilapia filet with the spices.tilapia filet: 4

3The moisture from the filet will help the spices adhere.

4If the fish is very wet, pat it dry with a paper towel before beginning, so that it is just damp.

5Melt butter in a skillet over medium heat until it begins to foam.butter: 1 Tbsp

6Add two of the tilapia filets at a time and cook for about two minutes on each side.

7Cook until the spices have turned a deep burgundy color and the fish is cooked through.

8Repeat with the second two tilapia filets.

9Add more butter before beginning, if needed.
